Recipes to Make at Home This Holiday Season – Part 1

At Cedar Point, we have an extraordinary culinary team! Our chefs gave us some fantastic recipes to share with you, and I’m going to spill the beans (figuratively) on how these treats are made.

Let’s start with the “Chicken IN Waffles”

This is a creation that Chef RJ has perfected.

Look at all that goodness.

Here’s how you can make it at home – you will need a waffle iron.

Ingredients:

  • waffle mix                                        as directed
  • water                                                as directed
  • kosher salt                                       pinch
  • chicken tenders                              3 per waffle
  • maple syrup                                    1 cup
  • vanilla extract                                 1 Tsp.
  • whipped cream                              as needed

Preparation:

  • Cook chicken tenders to temperature.
  • Cut cooked chicken tenders into bite-sized pieces, set aside
  • Make waffle mix as directed on container. Add pinch of kosher salt.
  • In your pre-heated waffle iron, ladle just enough waffle batter to cover the grates.
  • Place chicken pieces all around the iron, slightly pushing down.
  • Close the lid and cook for approximately 3 ½ minutes or until golden brown.
  • While cooking, add the maple syrup and vanilla extract in a bowl, mix well.
  • Pull the waffles out, cut in half and place them on a plate.
  • Top with whipped cream and a generous amount of maple syrup mix.

GUYS, I’m not lying… this is my new favorite thing I’ve ever tasted. I grabbed a huge forkful. The whipped cream really makes it. I was telling the chefs how much I love chicken and waffles (for real), but this one was really special. Because the chicken was bite-sized, you could absolutely taste it in the waffle, and combining the savory with the sweet… You’ll just have to trust me and make this at home!

Next, we have the C.F. Texan Sandwich

You may remember, we served this amazing concoction at The Corral this summer, and boy-oh-boy… it is a huge, amazing sandwich.
Here’s how you make it:

Ingredients:

  • Texas toast slice                                             3 pieces
  • butter                                                               4 Tbsp.
  • bacon                                                               4 strips
  • white cheddar pimiento cheese                 ¼ cup
  • country fried steak                                        1 patty
  • mayonnaise                                                    as needed
  • lettuce                                                              1 large leaf
  • sliced tomato                                                  2 slices
  • whole dill pickle                                            
  • large bamboo skewer                   

Preparation:

  • Cook bacon until crispy. Reserve 3 strips for plating, dice 1 piece for buttered bread, reserve grease for mayo.
  • Mix bacon pieces with butter until incorporated. Spready evenly on both sides of all 3 Texas Toast slices.
  • In a small bowl, mix together small amount of mayo and some of the bacon grease to incorporate the bacon flavor.
  • Cook the country fried steak to temperature (you can use fresh or pre-breaded – at the park, we bread these with flour, egg wash and seasoned flour, heavy on the black pepper in seasoned flour).
  • Cook in fryer at 350-degrees for approx. 3 ½ minutes or until golden brown.
  • To assemble: 1 bacon toast slice, bacon mayo, country friend steak, pimento cheese, bacon toast, bacon slices, lettuce, tomato, bacon mayo, bacon toast, whole dill pickle (cut diagonally) and skewer the whole thing closed.

This sandwich is absolutely a bacon-lovers dream come true, but it’s more than that. The flavors of the pimento cheese and the freshness of the country friend steak REALLY come through. It’s a magical, magical experience for your taste buds.
